Do you have a favorite meal of the day? I definitely do—and it’s breakfast. I could eat breakfast pretty much any time of day. I’m like the biggest supporter of breakfast for dinner (AKA, “brinner”), and don’t even get me started on brunch. I’m not sure what it is that I love so much about breakfast. Maybe it’s the comforting nature of it; maybe it’s the flavors. I don’t know. But whatever it is, I love it.
Remember how I told you MONTHS ago that our kitchen had a bunch of water damage and it was getting redone? Well, we’re STILL not done—no thanks to our insurance company. Dealing with insurance companies is the biggest pain, let me just tell you. We finally just got new cabinets installed this past week, and hopefully within the next two weeks we’ll be wrapping up. My point in telling you this is to explain why there hasn’t been a whole lot of culinary action on the blog as of late, since there’s been NO substantial culinary action in our house. It’s pretty much impossible to make a fun, creative meal without a stove and with 98% of your kitchen gear packed up in the garage. I swear, if I have to eat more meal of grilled chicken and a foil packet of veggies ….
Anywho, since I’ve been dying to cook something for breakfast other than scrambled eggs in my little electric skillet, I thought I’d share a round-up of some of my current favorite healthy breakfast recipes. (And technically, yes, some of these I’ve been able to make sans kitchen. But I’m still including them because they are super delicious!).

1. Homemade Acai Bowl from Fitnessista
Have you guys had an acai bowl? They. Are. So. Good. And since you’re eating, like, basically just a bowl of fruit, they feel completely guilt free. Now, you gotta make sure you don’t go crazy on the toppings, but trust me on this: this recipe is worth a try. You can find the acai packets at Costco, FYI!
2. Apple Cinnamon Baked Oatmeal from Eat Yourself Skinny
I only recently tried baked oatmeal, and immediately after tasting it, I wondered what took me so long to try it out. It’s warm and delicious and comforting. And the best part is that you cook once and have breakfast for the week! I just put mine in a bowl, pour a little almond milk over and pop it in the microwave.
3. Vanilla Raspberry Chia Pudding from Not Enough Cinnamon
You know I love me some chia seeds, which is why I love this particular breakfast option. It’s a deliciously fruity way to start your day. It’s a pretty low-cal breakfast, so if you need something more substantial, sprinkle on a little granola!
4. Huevos Ranchero Tacos from Cooking Light
It wasn’t until I started dating my husband that I started eating breakfast tacos and other tasty Tex-Mex breakfast delights. This recipe combines my favorite (breakfast tacos) with huevos rancheros. I haven’t tried it yet, but I have been drooling over the picture!
5. Protein Pancakes from Tone It Up
I love pancakes, but the problem with a carb-loaded breakfast for me is that it doesn’t keep me full–because it doesn’t have enough protein. Enter the protein pancake. This is a gluten-free, low-cal, vegan recipe that turns out super tasty. I personally don’t use Perfect Fit Protein (I feel like a traitor for saying that, since I’m a huge fan of the Tone it Up girls), so you can easily sub out your favorite whey protein.
6. Avocado Toast with Sunnyside Egg from Skinnytaste
If you stopped by my house at breakfast time, you could probably win a bet if you guessed that I’d be eating this for breakfast. I love this combination. The creamy egg yolk mixes with the creamy avocado, topped on a crunchy piece of toast. It’s so delicious and filling! I also love to scramble my egg—and when I’m super hungry, I’ll add in an extra egg white or two to give it more substance.
